Food prep day. 🙂

We had a pretty busy weekend, so I wasn’t able to food prep until around 7:30 p.m. Sunday night. I finished in an hour.

I almost didn’t do it at all, but I knew that would not be a good thing so I made the most of what I had.

I did not make it to the grocery store this weekend, so everything I had was in my fridge.

Luckily, we had gone to Gma Kay’s for dinner Sunday, so we had leftovers!

  • Pot roast, baked
  • Red potatoes or sweet potatoes
  • Green beans (I’ll be adding asparagus to mine once I get to the store)
  • Quinoa/rice mixture
  • Fresh pico (yup, it’s a staple now!)

Simple and omgosh it was so good!
