Meal prep is getting easier and easier!  I’m thinking more ahead about how much to make. Mark will be out of town tomorrow, so I had to account for that. Also, I love these meals but really need to mix things up a little. It’s getting easier to have “off” weekends. Not good!  I mean, even our off days are still pretty good, but I’m able to be a little more stringent than Mark is. He doesn’t have the weight I have to lose so I’m more concerned about his blood pressure, etc. The things we can’t see…

Anyways. Here’s this week:

Hard boiled eggs of course.

I decided lunches would be chicken this week, so I baked chicken tenderloin.  Sprinkled with Mrs. Dash Fiesta Lime seasoning.

Asparagus for me, green beans for Mark

Total Mexican craving today, so I decided to make Pico for the first time. Looked easy enough!

Here’s the final result:

Each container has:

~4 oz chicken tenderloin

~1/2 cup mixture of brown rice and quinoa

~1/2 cup green beans or several stalks of asparagus

~100 grams baked sweet potato (not pictured in this photo above)

~in side container: a couple T of pico

BTW, this is a life saver…. If you don’t have one… Get one. 🙂
